Viewers of Apple TV's new documentary series will see the Michelin Guide through the eyes of a 35-year-old chef who prioritizes connection over prestige. Jesse Burgess, the English culinary creator and co-founder of the media platform TopJaw, has been selected to host Knife Edge: Chasing Michelin Stars. The series, produced by Studio Ramsay Global, tracks chefs worldwide as they attempt to earn or keep the prestigious accolades.

Burgess was not part of the original casting plans. The production began filming without a designated host. Gordon Ramsay, who frequently appears on Burgess's platform, recommended that the chef fly to Sweden for a screen test. Ramsay stated that Burgess was the preferred choice from the outset, citing the chef's comfort in high-pressure situations as the deciding factor. This recommendation overtook a list of potential A-list presenters and interest from Apple's own talent pool.

Within the series, Burgess functions as a translator for the general audience rather than a traditional interviewer. He narrates the financial and emotional strains of restaurant ownership using a conversational tone. The format allows chefs to remain the central focus while Burgess observes events such as the Michelin galas from the sidelines. His approach aims to present the guide in a less elitist light, avoiding the pretension that often characterizes high-end food media.

Burgess has spent the last decade building this reputation. He and partner Will Warr founded TopJaw in 2015 as a YouTube channel based in London. The early years were slow, with the pair taking four years to reach 10,000 subscribers. Growth accelerated after the channel began posting travel content, including a video titled 48 Hours in Paris that has now received 2.6 million views. A pivot to Instagram during the 2020 pandemic helped the brand recover, and it now counts nearly 1.9 million followers across all platforms.

His personal interest in global cuisine traces back to his childhood. His mother worked as cabin crew, and Burgess recalled anticipating her returns with edible souvenirs such as Russian caviar and Danish pastries. This early exposure helped shape his professional path. Recent guests on TopJaw have included actors Matt Damon, Florence Pugh, and Kate Winslet. Singer Jessie Ware has referred to him as Mr Michelin, recognizing his rising profile in food media.

Knife Edge has been renewed for a third season, confirming Burgess's return to the role. Despite the move to traditional television, he has expressed satisfaction with his continued work in digital media. Burgess noted that he finds joy in creating internet videos and in a lifestyle centered on travel and food.

The series blends dramatic moments from the culinary world with accessible commentary. Burgess's background in candid conversations with London's culinary figures informs his on-screen presence. He explains complex concepts from a viewer's perspective, a skill that Ramsay said makes the material feel inclusive rather than critical.
