OpenTable published its 2026 Top 100 Restaurants in America list on Wednesday, revealing a shift in the national dining hierarchy. The annual compilation spans 21 states and Washington, D.C., with California retaining the largest share of honors.

Texas saw its representation drop from ten restaurants last year to seven in the current cycle. The state's remaining selections include Aba, J Carver's, and Red Ash Italia in Austin; Mamani, Mister Charles, and Mot Hai Ba in Dallas; and BCN Taste & Tradition in Houston.

Mamani and Mister Charles in Dallas are new additions to the ranking. Four established Austin venues that appeared in the 2025 list were removed: Jeffrey's Restaurant, Sammie's Italian, Suerte, and Uchi.

OpenTable stated that the selection process relies on data from over 11 million reviews by verified diners. The platform analyzed dining metrics recorded between Sept. 1, 2025, and Aug. 31, 2026. Restaurants were required to maintain good standing and meet a minimum threshold of reviews to qualify for evaluation.

The final list was determined by a combination of data points, including diner ratings, the percentage of five-star reviews, alert settings, advanced reservation percentages, capacity, and direct searches. The entries are arranged alphabetically by state rather than by rank.
